Sugar Beet Food Co-op and Schoolhouse's Founder, Cheryl Munoz, has served as a preceptor for Dominican University's Registered Dietician/ MBA Program since 2014.
This Fall semester, Sugar Beet Schoolhouse is working with Tori Davis who is completing her Marketing Internship as part of her program. Tori is earning her MBA at Dominican University while also completing her supervised dietetic internship, a 1200-hour internship with rotations in food service, community nutrition, clinical inpatient, and marketing/public relations. The dietetic internship is required for any individual who wants to become a registered dietitian. Dominican University is unique in that it’s the only university in the United States that offers a combined dietetic internship and MBA program. Tori will graduate in May of 2017 and hopes to work in public health or sports nutrition. She has a background in teaching yoga and Pilates classes and is interested in integrating fitness with nutrition.
"Many successful events and programs have been the work of our Dominican interns." said Cheryl Muñoz. "They have a lot of skills to share with us and are so enthusiastic about community health. It's a win win for the community."
At Sugar Beet Schoolhouse, Tori promotes events and manages social media. She also co-teaches The Good Food Experience, a gardening and cooking after school program at Whittier Elementary in Oak Park.
“I’m really interested in the impact community outreach has on public health, so I love working with the kids at The Good Food Experience,” said Tori. “It’s so cool to see kids excited about eating sustainable foods and impacting their community with the school garden.”
